Many years ago, I went to Portugal for my brother’s wedding to a lovely Portuguese woman, coincidentally named Dora. While there, I fell in love with their traditional Bacalao Soup, but alas, it was far from vegan. So of course, I was delighted to discover this recipe from the Dora’s Table website – Vegan Bacalao!

It is wonderful that so many creative cooks are capturing the flavors of traditional cuisines, while using healthy, plant-based ingredients. Thank you Dora!

Healthy whole foods are always best, and you will find lots of them here. This recipe features tomatoes, onion, garlic, artichoke hearts, hearts of palm, manzanilla olives (not sure what those are, but they look like regular green olives), capers, red bell peppers, bay leaf, nori flakes (or use Atlantic dulse flakes, which are a Medical Medium detox ingredient), new potatoes, parsley, and banana peppers (or pepperoni peppers). I think I might leave out those last peppers for a more Portuguese style.

I haven’t tried it yet, but I’m posting it here so I don’t lose track of it. If you get around to trying it before I do, let me know how you like it. Sure looks yummy in the photo! Here’s the link –
